Background :Casein is the predominant family of phosphoproteins in mammalian milk, accounting for about 80% of total milk protein. It comprises several subtypes (alpha-S1, alpha-S2, beta and kappa casein) that form micelles and provide amino acids and calcium phosphate to the newborn. Casein and its hydrolysates are widely used in food science research and as blocking agents in immunoassays.
